Korean Pancakes

I will introduce Korean-style pancakes. Korean pancakes are called Hotteok. Maybe some of you have heard or eaten them before. I have only eaten them once. They were so good. The texture was springy and crunchy. I want to try them again.

The left photo is Hotteok. It is mainly sold at snack food stalls in winter. It is made by kneading glutinous rice or flour. Sometimes you can also add cinnamon.  For normal pancakes, the method of making them is different. It is then grilled on an oiled iron plate. It uses a lot of oil when cooking, I thought it was more like frying than baking. There are many flavors. Basically, add brown sugar and cinnamon. For variation, you can add green tea, honey, adzuki beans, sesame seeds, nuts, or legumes. I ate these at Koreatown in Shin-Okubo. I recommend going there if you want to try them.

Netherland and Flanders Pancakes

I will introduce Netherlands and Flanders-style pancakes. In this area, pancakes are called "Pannekoek". These pancakes are made of flour and eggs. These are just the basics. You can add apple, cheese, bacon, ham, and candied ginger. Candied ginger is just ginger with added sugar. After that bake these. 

The left photo is Pannekoek. These look bigger than regular pancakes. The dough is slightly thicker than crepe dough. This pancake can be over 30 cm in diameter. I said before that you put various ingredients in the dough. But sometimes they don't put any ingredients in the dough, and just sprinkle sugar on it and eat it. I think it is like a crepe.

German Pancakes

I will introduce Germany-style pancakes. The German pancake is also called "Dutch baby pancake". Other names are "Bismarck" and "Dutch puff". About the origin of names,  the restaurant's second owner named it "Garman pancakes". But German pancakes were too large. So many people couldn't eat all of it. The owner thought he would try to make it smaller. The completed pancake was similar to Germany and the Netherlands. Germany is next to the Netherlands. Which is smaller than Germany. 

The left photo is "The Dutch baby pancake". It is baked in an oven using an iron skillet. The dough is the same as normal pancakes, but there is one difference. It uses a lot of eggs. I tried to search about using a lot of eggs for pancakes. Using a lot of eggs makes it elastic and a little hard. But it uses an oven, so this pancake around is crispy like pie. I am interested in these pancakes.

American Pancakes

I will introduce American-style pancakes. American pancakes are thick, so sweet, and have a lot of maple syrup or whipped cream and butter. And they are eaten in the morning. I think it isn't healthy. But I don't care. 


American pancakes are made of flour, eggs, milk or buttermilk, baking powder, and baking soda. Sometimes you add a little sugar. To add sweetness and flour add  blueberries, strawberry, cheese, bacon, bananas or chocolate chips. You can also add nutmeg, cinnamon or vanilla essence. Mix everything. After that, put the dough on a heated hotplate. 
As a variation here is the original State of Vermont pancake using flour with oatmeal or soba flour. Original Mexican pancakes use corn flour and is seasoned with condensed milk, fruit jam, or dulce de leche. Dulce de leche is made of sheep's milk. It is mixed with sugar and heated. The right photo is about this.

The Origin of Pancakes

  
 
 I think that regular pancakes are flour, eggs, and milk mixed together. And I will put butter with maple syrup or honey, or chocolate syrup. Someone will put whipped cream or with bacon and eggs in the morning. It's thick, soft, and sweet. But, I think everyone thinks pancakes were first made in America. It's not true. They were first made in ancient Greece. Then, the pancake was made of flour, water or olive oil, and honey. There wasn't baking powder. So it's thin and not sweet. And it was cooked on a heated stone.  The picture on the right is an old Greek-style pancake. I picked it up on the Internet. There is no record of who first made pancakes. However, pancakes were written about in literature in the 16 century. In the 18 century, the recipe was written in recipe books. And in the 19 century, people everywhere started to eat them.
